To make puri
1 cup all purpose flour
1 tablespoon semolina
½ teaspoon celery
2 tablespoons oil / ghee
salt to taste
Oil for deep frying
Other material
3-4 Potatoes, boiled
1 tomato
6-7 Green Chillies
Handful spinach
½ teaspoon turmeric powder
salt to taste

Some coriander leaves
* Mix the flour with celery, oil (ghee), salt and enough water and knead a soft dough.
* Divide the dough into 10-12 small portions.
* Roll them into a 7-8 cm disk or circle (such as a chapati).
* Heat oil in a pan, fry the puris on medium or low heat till crisp and golden.
* Place puris on Absorbent paper to remove excess oil.
Boil and peel the potatoes. Mash the boiled Potatoes.
* Add mashed potatoes, chopped tomatoes, green chillies and spinach to the pressure cooker. Pressure cook and cook for 1 whistle.
* While serving, keep the poori in it and add the whole mixture.
* Pour tamarind sauce over it.
* Sprinkle chaat masala, coriander leaf chutney (coriander), chopped onion and sev.
