Traditional Gujarati recipe Khandvi is very tasty to eat and is also very easy to make.

material:

Gram flour - 1/2 cup (60 grams)
Whipped curd - 1/2 cup
Salt - 1/2 tsp or as per taste
Turmeric - less than 1/4 teaspoon
Ginger paste - 1/2 teaspoon
Oil - 2 tsp
Coriander - 1 tbsp (finely chopped)
Fresh Coconut - 1-2 tbsp (grated)
Mole - 1 tsp
Rye - 1/2 tsp
Green chili - 1

Method:

Prepare the slurry in a mix jar for Khandvi. For this, put gram flour, whisked curd, salt, ginger paste, turmeric powder and 1 cup of water in the mixer jar and stir them in the mixer jar.

The batter is ready, put the pan on the gas to cook it and put the batter in the pan. While stirring the batter with a spoon, cook it until it is thick. Keep stirring the batter continuously. This solution will become sufficiently thick in about 4-5 minutes.

Turn off the gas when the solution is thick. Now take a plate, keep it upside down and spread the Khandvi solution thinly in the plate, spread the solution very thin with the help of a flip. Spread all the solution thinly in the plates and let it cool.

The mixture cools and freezes, cut this frozen layer into long wide strips with the help of a knife and make a roll of these strips, put all the rolls on the plate.

Now put oil in a small pan and heat it, put mustard seeds in hot oil, when the mustard seeds are roasted, add sesame seeds and turn off the gas, now add finely chopped green chilies and mix. Now put this tempering on the top of the Khandvi, garnish it with grated coconut and finely chopped green coriander over the Khandvi.
