(Most Popular Dish) made for (Iftar Party), which you can make for your special guests. The tastier it is in food, the easier it is to make. You can serve it with rumali roti, naan or rice, then definitely try this special mutton korama


500 grams of mutton and 3 potatoes (cut into pieces)
1-1 tsp shajira, chironji, magaz, poppy seeds, ginger paste and garlic paste
8 almonds, 2 inch coconut pieces
Green Masala Paste (2 tablespoons green coriander, 1 tablespoon mint and 4 green chilies - grind all three together)
1 pinch saffron (1 tablespoon mixed with lukewarm milk)
5-5 green cardamom and cloves
1 inch cinnamon stick
3 onions (cut into thin and long slices)
Salt to taste
Half a tsp red chilli powder
1/4 tsp turmeric powder
1 cup thick curd
Oil as required

Method:

Heat 2 tablespoons oil in a pan, add potatoes and fry them till they turn golden and keep aside.
In a pan, add shahi jeera, magaz, chironji, poppy seeds and coconut and fry without adding oil.
After cooling, mix some water and make a paste.
Heat 3 tablespoons oil in a pan, add cinnamon, cloves and cardamom and fry till it smells.
Add onion and ginger-garlic paste and fry until golden.
Add mutton and fry for 5 minutes on high heat.
Then reduce the flame and add red chili powder, salt and turmeric powder and fry for 3-4 minutes. Add curd and cook for 5 minutes.
Add the paste of shah jeera-magaz and fry till the oil leaves the pan.
Add 2 cups of water and cook till the mutton melts.
Add green masala paste and fried potatoes and cook for 5 more minutes.
Add saffron solution and cook for 1-2 minutes.
Serve hot with steamed rice or roti.
